Well hello there old friends! Hope you’re having a fabulous weekend. I hate to brag but this winter weather in South Florida is absolutely amazing. I apologize ahead of time to my friends that live in the cold weather states, you know who you are! It is 71 degrees, not a cloud in the sky and the sun is shining brighter then ever here. Now, what does suck is being home sick with stomach flu all week. Food or cooking doesn’t exactly excite me at the moment (weird I know). For the past 5-6 days I have been living off of pedialyte, saltine crackers, soup and smoothies. We are leaving for our annual Lake Tahoe ski trip in less then a week so I have been pulling out all the tricks in the bag to get my health back on track. Between airborn, zicam and this antioxidant acai bowl I think I am good to go!
The first time I tried an acai bowl was a year ago in Kauai while we were on our honeymoon. To be honest I was confused about what acai was exactly and even how to pronounce it! Of course I turned to the trusty ole’ Google machine for answers. Here’s a great article that explains what acai is and all of it’s health benefits. Seriously good stuff! You should be able to find it in the frozen fruit isle at your local health foods store. I found these frozen puree packets at Trader Joes.
I’m loving this new trend of making smoothie’s into something you eat with a spoon. One of the best secrets to a successful balanced diet is keeping things fun, interesting and fresh. So if that means eating something instead of drinking it through a straw, then I’m all for it!
What I love even more about this antioxidant acai bowl is picking all my favorite toppings. It’s a great way to clean out your pantry. And just because it’s Valentines Day I thought I would jazz things up a bit with pretty little strawberry hearts.
- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 1/2 cup unsweetened Vanilla Almond Milk
- 1 packet of frozen acai puree
- 1 tbspn raw honey
- 2 fresh strawberries cut in half or whatever fruit you have on hand
- 1 tbspn chia seeds
- 2 tbspn GF Granola
- Place all the base ingredients into a blender until completely combined and smooth.
- Poor the base into a bowl and add all the toppings.
