Fun little kitchen hack for you that might save you a few fingers. If you ever have issues cutting your spaghetti squash in half, throw the entire thing into the microwave for 4-5 minutes and then it will cut like buttah’. You can thank me later!
This buffalo chicken stuffed squash may be covered with cheesy goodness but I don’t feel so guilty knowing I’m eating tons of veggies! I posted this on social media a few months ago while I was recipe testing and everyone went banana’s over it.
My apologies for taking so long to post it but every time I made it I started eating it before I was able to snap any pictures for the blog. I know, I have a serious problem. In my defense we have been traveling (shared in this post) for the past three weeks so I’ve been a bit busy too!
My favorite part of this recipe other than everything are the creamy little nuggets of blue cheese hidden inside each bite along with a little crunch factor from the celery. Can you honestly go wrong with the wining combination of Buffalo, blue cheese and celery? The answer is NO, absolutely not!
Just in case you are wondering, this recipe passed the husband test with flying colors! I’m even considering keeping this on the repeat list and making it for a dinner party to feed a crowd since it’s so easy.
