If you’ve been following me on Instagram I’m sure you know I’ve been doing some traveling lately. We just got back from the most unbelievable ski trip to South Lake Tahoe and we will be leaving again in just a few days for another ski trip to Park City, Utah. We usually try to take two ski trips every year, one with my family and one with my husband’s family.
After spending 7 days in the freezing cold snow I feel more grateful than ever to live in a warm weather state! I swear I would be 300 lbs if I lived somewhere cold. All I wanted to eat was carbs and comfort food to keep me warm! What else do you do when you’re snowed in for two days other then eat and drink?
The first thing I did when I got back home was head straight to Orange Theory for a serious sweat session and went to Publix and bought a boat load of vegetables. After eating like poop and drinking my face off for seven straight days my body was craving nothing but leafy greens and all sorts of vegetables. This delicious and light Greek quinoa salad will be the perfect start to getting my diet back on track.
It’s packed with tons of fresh vegetables and I love how the quinoa provides a nice punch of protein for some extra staying power in your belly. If you are looking to cut dairy or any additional calories, feel free to cut the feta cheese out of the recipe. Personally I prefer that little extra creamy salty bite from the feta cheese, it’s totally worth it.
Flavored olive oils are a big trend in the foodie world these days and I have totally jumped on that band wagon. We have a local joint here in South Florida that I frequent called Lovin’ Olive. I used the Lemon infused olive oil for this Greek Quinoa Salad. If you aren’t able to get your hands on flavored olive oils don’t you worry, just use regular EVOO and the juice from one lemon.
Keep in mind this recipe will make a fairly large batch. I plan on stashing it in my fridge and eating it all week long and pairing with grilled fish or chicken.
