Breakfast can be such a challenging meal for most people. If you fall into that category it’s your lucky day. This make-ahead strawberry shortcake overnight oats recipe will be your new breakfast life saver!
On most days my sweet husband gets up early to make me breakfast while I get ready for work. Since he owns his own business and we don’t have any kids to chase after yet he doesn’t mind taking on the breakfast task. I must say, he is the best egg maker in all of the southeast! Fried, poached, over-medium, scrambled, over-easy, omelette…you name it and he nails it every single time. Remind me to share his sweet and savory breakfast sandwich recipe, it’s a family favorite. The other day I challenged him to make Eggs Benedict from scratch and if you follow me on Instagram I’m sure you saw his masterpiece. I love that man!
Anyways, back to the oats.
Although I absolutely love his breakfast, sometimes eating eggs everyday gets old and I can’t seem to stomach the thought of another egg. This is when the oats come to the rescue. I am able to prep the strawberry shortcake overnight oats the night before by throwing everything into a mason jar. As I head out the door in the morning I toss the oats into my lunch box with a plastic spoon and I usually eat them at my desk as I catch up on emails and sip on my coffee.
I love how the oats provide the perfect foundation to get creative with the flavors. Try different types of fruit combinations depending on what’s in season, add yogurt for a creamier texture or even use chocolate almond milk to make it more dessert like. These are just a few ideas but whatever combination you choose is entirely up to you and your palate. You honestly can’t go wrong!
