I can’t believe the New Year is upon us! I always say this but I really mean it this time….where in the world did the time go? 2016 was surely a doozie and if I could put this year on repeat I totally would. So many wonderful memories to cherish. Just to name a few of my favorites:
I got married.
We took the most amazing 3 week honeymoon to Hawaii.
We bought our first home.
I know 2017 has great things in store for us and I can’t wait!
We purchased our home with the intention of doing a ton of entertaining and we’ve definitely kept our word on that. So in true Fajardo fashion we are ringing in the new year with a fiesta at our house! We built a huge island in the kitchen that everyone flocks to when we entertain. I love to load the island up with lots of finger foods and dips so everyone can just grab, pick and graze as they please.
This easy Greek yogurt dip will be the perfect addition to our island appetizer spread. I love that it’s a little more figure friendly and is packed with super fresh flavors.
Ugh, I just love Greek food in general. Greek flavor staples like lemon, feta cheese and olives are just to die for! Jersey certainly agrees that this dip needs to be on repeat because that means more carrot treats for her!

- 1 cup of Greek Yogurt
- 1/2 cucumber seeded, peeled and chopped
- 1 tbspn of chopped fresh dill
- 1 tbspn of chopped fresh mint
- Juice from half a lemon
- 1/4 cup of feta cheese
- 1 garlic clove grated
- salt and pepper to taste
- Combine all the ingredients into a bowl and mix together. Serve with your favorite fresh vegetables or pita bread/chips. Enjoy!
